  • Selected from Riesling trials conducted from 1991 to 1996 in the Heiligenstein region of Austria.
  • Tolerates fermentation temperatures as low as 10°C(50°F) and alcohol levels up to 15% (v/v). In very cold fermentations, allow the temperature to increase toward the end for a clean finish.
  • Lalvin R-HST® has a short lag phase and generation time, even at cold temperatures. This allows it to domi­nate and persist over spoilage yeast such as Kloeckera apiculata, where other S. cerevisiae might have difficulty.
  • Retains fresh varietal character while contributing structure and mouthfeel. It can produce crisp, pre­mium white wines suitable for aging.
